Has anyone converted a stock fuelcap to a keyless setup that DOES NOT require a screwdriver or other implement to open? I was thinking about something like a fixed knob or something that can be turned to open the cap.

spare key cut off and brazed to a flat piece of metal with a little tab sticking up just enough to grab works well
As above that is what we do, just take a spare key and cut it down and put a little jb weld on it so it doesnt come out. We also break the little flap thing that covers the lock off. If you dont have the key just get a blank or some other key and drill out or break the lock and jb weld the key in it.
On a honda you can take the lock apart and remove the slide pieces which form to the key to open the lock. Effectively at that point, you can put anything flat in there and open it.
