Wanted to see if anyone can suggest the proper Daytona gearing for a Kawasaki ZX6R and also a Yamaha TZ 250.

Generally stock gearing for your bike is a good starting point. I have seen people go either up or down in gearing from stock, but USUALLY not more than the equivalent of 2 or 3 teeth on the rear sprocket. It will depend on your bikes power (including it's ability to pull all the way to redline in it's top gear), how much speed you carry out of the chicane in the back section, and your personal riding ability.
